Pan-seared butterfish
Fish with fragrant spices and beurre noisette sauce, topped with sea urchin and grilled eggplant espuma.
- Terrine of "Higashihiroshima Koi Jidori," the only free-range chicken breed in Hiroshima Prefecture, and truffle-scented mousseline.
Two sauces are used: a creamy chicken sauce and a sherry vinegar-flavored sauce.
